Los alimentos se guardaban o manipulaban de una forma que podía permitir que les llegaran gérmenes u otros materiales, como carne cruda guardada encima de comida lista para comer o alimentos sin cubrir. La contaminación cruzada es una causa común de enfermedades transmitidas por alimentos.

The procedures should address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomit or fecal matter. El personal no se lavaba las manos cuando debía, o un lavamanos estaba bloqueado, sin jabón ni toallas de papel, o se usaba para otra cosa. Las manos son una de las formas más comunes en que los gérmenes llegan a la comida.

Observed food employee preparing food on the cook line with single use gloves on, changed tasks including handling soiled equipment, removed soiled gloves and put on new gloves without washing hands in between. 2 301.14 Food employees shall wash their hands after handling soiled utensils or equipment or changing tasks and before putting on gloves. Food employees may not contact exposed, ready to eat food with their bare hands and must use suitable utensils such as single-use gloves, deli tissue, spatulas, tongs, or dispensing equipment. A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees and shall be clearly visible. 6-301.11 Handwashing cleanser, availability. Observed cooked cooked vegetable mix of zuchinni, onions and other cooked vegetables and red sauce made inhouse stored in the walk-in refrigerator with expired date marking (dates between 6/4 and 6/9, past 7 days). 3-501.17 Ready-to-Eat, Time/Temperature Control for Safety Food, Date Marking. (A) ... refrigerated, ready-to-eat and time/temperature control for safety foods, prepared and held in refrigerator for more than 24 hours shall be clearly marked to indicate the date it was prepared or day by which the food shall be consumed on the premesis, sold, or discarded when held at a temperature of 41ºF or less for a maximum of 7 days. Observed Reduced Oxygen Packaged (ROP) frozen fish (salmon and tilapia), thawing in the walk-in refrigerator, still sealed in original ROP packaging. Label on the ROP package clearly states, "Remove from package before thawing". 3-501.13 (E)(1) Reduced oxygen packaged fish that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment (1) Prior to its thawing under refrigeration. Operator was asked to open ROP packaging and placed it back in the refrigerator to continue thawing. Operator agrees to remove frozen fish from ROP packaging before thawing going forward.
