Education provided, Employee agrees to keep the cold top lid closed when not in use, use metal pans and fill only to fill line. Items in cold top should be routinely monitored with a probe thermometer and maintained at 41ºF or below throughout storage. No TCS food items will be stored above the metal containers in the cold top.
