Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.
Redacción oficial (en inglés): Have a thin-tipped food thermometer easily available to measure the internal temperature of thin pieces of food.
Nota del inspector (en inglés): Observed a thick bimetallic stemmed thermometer. Thin mass foods are cooked that require a thin tip thermometer to be present. Provide and maintain a thin tip thermometer on site. Operator is in process of ordering an applicable thermometer. - Menor Problemas de permisos, capacitación o avisos

Nota del inspector (en inglés): Observed no state certified food protection manager for facility. Operator took a ServSafe class end of August 2025 and needs to apply for state of MN certification. Discussed proper requirements and how to apply with operator. A link has been provided below.
