    Nota del inspector (en inglés): Observed oysters which are served raw and ready-to-eat, stored below raw meats in the walk-in cooler. Ensure ready to eat foods are protected from raw animal foods by storing ready to eat foods above raw animal foods. At time of inspection PIC moved the oysters and demonstrated the proper storage order.

    Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.
    Redacción oficial (en inglés): A business does not need to submit a HACCP plan for reduced oxygen packaging if foods are: 1. Labeled with date and time they were packaged, and 2. Held at 41 degrees F or less, and 3. Removed from all packaging within 48 hours of sealing.

Ensure when using the 48 hour rule to mark foods for the date and time, held at 41F or less during refrigerated storage and removed from it's package in the food establishment within 48 hours after packaging.
