- Crítica Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.
Redacción oficial (en inglés): For mechanical dishwashing machines using hot water sanitizing, the surface temperature of the utensils and equipment must reach 160 degrees F or higher.
Nota del inspector (en inglés): Observed the final rinse temp at dishmachine was only 150*F. Provide a fiinal rinse temp of 160*F on surface of utensils or 180*F on dishmachine manifold. Until repaired the warewashing sink will need to be utilized to sanitize utensils and equipment. Note: Dishmachine technician scheduled to come out this week to repair dishmachine. - Menor Problemas con el lavado de manos

Redacción oficial (en inglés): Food businesses must have handwashing sinks with a water temperature of: • At least 100 degrees F • Not hotter than 130 degrees F • If children use the sink, the water temperature must not be hotter than 120 degrees F
Nota del inspector (en inglés): Handwash sink hot water temps were as follows: front counter 140*F, the Flame 135*F, kitchen 110*F and employee restrooms 110*F. Hot water at handsinks to be between 100*F and 130*F. Lower sinks too hot to 100*F - 130*F.
