The MOD and PIC were advised to adjust the cooler to maintain all cold TCS foods at or below 41°F at all times and to replace the cooler if it cannot hold proper temperature. They were also informed that this repeat violation will result in a $200 citation per City policy.

Temperatures of TCS foods in the small over-the-counter cooler were found above 41°F. The MOD and PIC were advised to discontinue the use of ice baths and to provide or utilize an adequate number of approved mechanical coolers to maintain proper cold-holding temperatures of 41°F or below.

    Nota del inspector (en inglés): Observed gaps around several floor drains in the back room where the tiles were not properly cut to fit snugly around the drain. Several floor tiles were also missing in the front area of the establishment. Additional issues included multiple holes in the back-room walls and two large screws protruding from the floor in the back storage area, posing a potential injury hazard. The PIC and MOD were informed to ensure these issues are properly corrected and that all gaps and holes in walls and flooring are filled and sealed with materials that are smooth, durable, non-absorbent, and easily cleanable, in accordance with code requirements.

    Nota del inspector (en inglés): Temperatures of some hot-held TCS foods (rice at 104°F and queso at 118°F) were below the required minimum hot-holding temperature of 135°F. The MOD and PIC were informed to reheat these items to 165°F before serving and to ensure all hot TCS foods are maintained at 135°F or higher at all times, including during peak lunch hours.
