Redacción oficial (en inglés): While TCS foods are cooling, keep containers uncovered, unstacked, and spread out.

Nota del inspector (en inglés): Observed mashed potatoes, beef and noodles, and other cooked TCS foods in the stand-up cooler to have been cooled while covered. Make sure leftovers are cooled uncovered to assist in proper cooling.
Redacción oficial (en inglés): Protect food from contamination by using packaging, sneeze guards, display cases, or other effective means.

Nota del inspector (en inglés): Observed there to be no sneeze guard at the self-service hot well. Provide a sneeze guard to protect food from contamination.
