Nota del inspector (en inglés): Observed the condensate line for the walk-in cooler draining into a green bucket. The bucket appeared to have some water The condensate line must drain into a floor drain. Violation has been cited multiple times. Nota del inspector (en inglés): Observed cooked potatoes held under a heat lamp at 98F. Per conversation with the Person In Charge (PIC), potatoes were being held under the heat lamp while awaiting delivery for catering. The PIC was instructed to move the potatoes to the electric hot box, holding food over 135F. Ensure that all hot food is properly maintained at 135F or higher while waiting to be delivered. - Menor Alimentos a una temperatura insegura

Nota del inspector (en inglés): Observed raw ground beef and another thawing in a prep table. A conversation was had with the PIC regarding the approved thawing methods. Use one of the methods listed above when thawing food. - Menor Problemas de limpieza o desinfección

Los alimentos se guardaban o manipulaban de una forma que podía permitir que les llegaran gérmenes u otros materiales, como carne cruda guardada encima de comida lista para comer o alimentos sin cubrir. La contaminación cruzada es una causa común de enfermedades transmitidas por alimentos.

Nota del inspector (en inglés): Observed chicken being prepped in the 3-compartment sink. A discussion was held with a food worker on the importance of using the 2-compartment sink instead for food prep. The PIC was instructed to have the 3-compartment sink properly cleaned and disinfected before washing, rinsing, and sanitizing dishes.
