These products were discarded during the inspection, and a service call was initiated. Feta-stuffed olives in the packaged olive bar were holding at 43 degrees F. The product was discarded, and the proper fill capacity for the unit was reviewed. Deli salads were placed into the big display unit between 55-44 degrees F. Temperatures were monitored over the next 90 minutes, and only minimal cooling of 1-2 degrees was observed. This unit is not likely to be effective at cooling foods, especially foods packed this high. Ensure that all cold TCS foods are held at or below 41 degrees F.
