    Nota del inspector (en inglés): Hood baffles were observed soiled with excessive grease accumulations with some starting to drip down onto the equipment. Discussed with Person In Charge that hood baffles need to be cleaned more frequently to prevent such significant grease accumulations to reduce the risk of fire. Increase frequency of cleaning hood baffles and maintain clean to sight and touch.

Discussed with Person In Charge that hood baffles need to be cleaned more frequently to prevent such accumulations to reduce the risk of fire. Since facility started operating 2 months ago, discussed with manager that they should get professional cleaning of the hoods done every 6 months as well. Clean hood baffles more frequently to maintain clean.

    Nota del inspector (en inglés): Sanitizer spray bottle was measured at 500PPM quat at the time of inspection. Sanitizer label indicates a safe and effective range of 200-400PPM quat. Manager diluted container until it measured within the 200-400PPM range. Discussed with manager that they can mix the sanitizer sink first and then fill bottles after they get the sink made up within the correct quat sanitizer range. Keep sanitizer within safe and effective range according to manufacturer label.
