    Nota del inspector (en inglés): Cooked potatoes were observed cooling in the COS Walk In Cooler with the lids tightly covering the product at the time of inspection. Chef immediately had staff re-pan the food into thin pans and placed them into the Produce Walk In Cooler so that they could cool properly. Retrain staff to use proper cooling methods to rapidly and safely cool foods.

    Nota del inspector (en inglés): Bar dishwasher on 1st floor was measured over several cycles at no greater chlorine sanitizer concentration than 10PPM. Data plate on machine indicates that sanitizer needs to be at a minimum sanitizer concentration of 50PPM. Discussed with bar staff to discontinue using dish machine and to instead use dishwasher on the first floor or cart bar dishes up to the COS level to be washed there. Repair machine so that it dispenses 50PPM chlorine sanitizer to adequately sanitize dishes.

Obtain either temperature stickers or a maximum registering thermometer to monitor sanitize cycle of dish machine. Maintain on site at all times.

Discussed with Chef that foods that are cooling must remain uncovered so that they cool quickly. Retrain staff to use rapid cooling methods to cool foods safely.

    Redacción oficial (en inglés): Remove frozen fish from the reduced oxygen package prior to thawing under refrigeration or immediately after thawing if using the running water method of thawing.

    Nota del inspector (en inglés): Tuna steaks were observed thawing under vacuum seal with the packaging still intact. Instructions on package stated "remove from package before thawing". Discussed with Chef that some bacteria can grow at refrigeration temperatures under a reduced oxygen environment and that staff need to break the seal of frozen vacuum sealed fish with this instruction before thawing from frozen. Chef discarded thawed fish immediately. Retrain staff to thaw vacuum seal frozen fish either removed from packaging or by breaking the seal so that it is safe.

Discussed with Chef that customers need to be notified of the risks of consuming raw or undercooked foods or ingredients and that they should be clearly denoted in the menus. Provided a copy of the Minnesota Consumer Advisory requirements with emailed report. Provide a complete consumer advisory so that customers are adequately warned of the risks of consuming raw or undercooked food or ingredients.

    Nota del inspector (en inglés): Several sauces and dressings were observed with date marks that exceeded 7 days in the back of the Walk In Cooler. Chef pulled these items and placed them in the dish pit area to be disposed of. Discussed with Chef to have employees monitor date marks more often to ensure that TCS foods are discarded by end of day 7. Retrain staff to monitor dates more frequently and use up or discard products by their 7th day.
