Redacción oficial (en inglés): Use an effective method to date mark refrigerated, ready-to-eat, TCS food prepared and held for more than 24 hours. Day one is the day the food was made.
Nota del inspector (en inglés): No date marking on the following food inside the walk-in cooler: bulk tomato sauces, spaghetti meatballs, sliced roast beef meat in Ziploc bags, and diced tomato containers. Date mark all food that will be in the facility for more than 24 hours.

Nota del inspector (en inglés): Observed lasagna in a metal tray and meatloaf in the walk-in cooler with no date mark. Date mark all foods that will be in the business for more than 24 hours. - Crítica Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta.
