    Nota del inspector (en inglés): Observed employee to enter the kitchen area, put on gloves, and start to handle sambusa without washing their hands. Employee was instructed to wash their hands and then put on new gloves. Make sure employees wash their hands before putting on gloves and starting food handling.

    Nota del inspector (en inglés): Observed there to be no method of recording instances of employee diarrhea or vomiting at the establishment. It was discussed with the Person-In-Charge that it is required to record every instance of employee vomiting or diarrhea. An employee illness log will be included in this report. Ensure that the employee illness log is maintained onsite.

    Nota del inspector (en inglés): Observed the Person-In-Charge to not be aware that the food contact surfaces of the coffee pots and tea kettles need to be adequately sanitized to prevent the onset of foodborne illness. It was discussed with the Person-In-Charge that they need to have an approved food contact surface sanitizer onsite. It was demonstrated during the inspection how to test for proper concentration of sanitizer, and how to properly set up and use the 3-compartment sink. Ensure that all members of supervision and management are knowledgeable of this process and train applicable employees.
