Discussed with owner that dish machine is to be used with chlorine sanitizer per manufacturer data plate and that the machine should be discontinued using and serviced to be restored to chlorine sanitizer use as machine is intended. Strongly recommended service of the machine by professional company as switching the machine from quat to chlorine could mix the two substances and cause gas reaction. Dish machine was ordered to not be used and the 3 basin sink will be used until the machine can be serviced. Once machine has been serviced, ensure that it is operating according to data plate and maintain per manufacturer's instructions.
