    Nota del inspector (en inglés): Several packages of tuna and tilapia in Reduced Oxygen Packages (ROP) were observed thawing still inside their intact ROP packages. This presents a serious risk of foodborne illness by the bacteria Clostridium botulinum. Inspector and Person in Charge discussed that oxygen stops the growth of this bacteria, so the bags can be cut open on the corner to let oxygen in as soon as they are removed from the freezer. At the time of the inspection, the fish were below 38F, so they were able to be opened to continue thawing. Train staff to always open ROP packages of raw fish before thawing to allow oxygen to enter the package.
