Redacción oficial (en inglés): Label all containers of food and food ingredients with their common name.
Nota del inspector (en inglés): The bulk containers of sugar, etc., need to be labeled with their ingredients.
Redacción oficial (en inglés): The business must employ at least one valid Minnesota Food Protection Manager's certification (CFPM). Find more information on the Minnesota Department of Health web page.
Nota del inspector (en inglés): The facility still does not have a CFPM. Visit the MDH website for more information about classes and how to obtain a CFPM Certificate.
Redacción oficial (en inglés): Keep a log to record employee illness symptoms. Have it available upon request.
Nota del inspector (en inglés): No employee illness log was found at the time of the inspection. One was given to the operator.
Redacción oficial (en inglés): Maintain all hot, TCS foods at 135 degrees F or hotter. (Roast beef may be held at 130 degrees F or hotter, if it is cooked according to Part 4626.0340 item B or reheated according to Part 4626.0360, item E.)
Nota del inspector (en inglés): Although the food in the hot holding units were at the correct temperature, staff are still leaving chicken/fish in the deep fryer baskets after being cooked instead of keeping them either hot or cold. The temperature of the chicken was 112F. It should be at least 135F at all times.
