Discussed with Chef that foods need to remain uncovered until they are fully cooled to 41F or lower, then they can be covered. Chef uncovered tuna salad immediately to finish cooling. Gouda hash brown potatoes that had been pre-cooked were observed cooling in the Walk In Cooler stacked perpendicular on top of each other at the time of inspection. This can prevent the food from cooling most rapidly because the pans are stacked so close to each other. Chef rearranged pans so that they were flat on the shelf to cool. Retrain staff to cool foods uncovered, unstacked and spread out.

Chef refreshed sanitizer bucket and it was measured at 200PPM. Change out sanitizer buckets more frequently to ensure that they are within safe and effective range at all times.

    Nota del inspector (en inglés): The menu had recently been updated and the following items were observed missing the asterisk: Fresh Oysters Steak under the Salad Additions and in the Mediterranean Bowl Consumer advisory guidance document was provided with emailed report to use as a reference when editing the menu. Asterisk these food items to tie them to the consumer advisory on the bottom of the menu. Do this for the paper copies in restaurant and the online menus.

Discussed with Chefs that rapid cooling should be facilitated by cooling with ample air space between pans so that the air can get between pans to cool foods faster. Chef rearranged rack so that there was space between pans of cooling foods. Retrain staff to space foods apart and use rapid cooling methods.

    Nota del inspector (en inglés): Bernaise sauce on an upper shelf in the grill area was measured at 94F at the time of inspection. The sauce had been out since before the lunch period and was beyond 4 hours. Discussed with Chef that this sauce needs to be kept hot at 135F or higher to keep it safe. An alternative to keeping the product hot is to use it under a Time as a Public Health Control (TPHC) plan and discard remaining product after 4 hours. Provided TPHC plan with emailed report to operator. Chef discarded sauce. Keep all hot TCS foods at 135F or higher to keep safe for consumption.

Discussed this with Chef, who stated that the soups are made in larger batches and then frozen. This product was made in a large batch, date marked for the day it was made, then frozen, removed from freezing and then thawed the day before. Discussed with Chef that they should be marking a pull date for the product so that it is known it was frozen and then pulled to more effectively track the discard date. Chef had prep cook put date that the product was pulled from freezer on the date mark. Retrain staff to add a second date mark to food prepared or opened on site, frozen and pulled from freezer.

    Nota del inspector (en inglés): Moist cooked bacon was measured at 89F at the time of inspection in the Hot Well. Chef stated that the cold food had been placed in the hot well shortly before the inspection occurred and it is used up within 1 or 2 hours during lunch. They place the product back on the grill to crisp up before serving on sandwiches and other orders. Discussed with Chef that foods cannot be held in the danger zone intentionally unless under a Time as a Public Health Control plan and remaining product is discarded when the time is up. The bacon cannot be hot held as it could overcook. Discussed with Chef that the safest option would be to cold hold the cooked bacon, pull it out when needed and keep the rest cold until used. Discard TCS foods that are not properly cold held and maintain all TCS foods cold at 41F or below at all times for them to be safe to serve to customers.

    Nota del inspector (en inglés): A squeegee used for clearing water off the clean side of the dish machine was observed stored in the food preparation sink. Discussed with Chef that that hand sink needs to be clear of obstructions and available at all times during operation so that employees can wash their hands. Squeegee was removed immediately. Keep all hand sinks clear for handwashing at all times and maintain.

    Nota del inspector (en inglés): A large pot of tomato basil soup was observed cooling in the food preparation sink ice bath at the time of inspection. Initial measurements of the soup indicated that it had not yet dropped below 135F to start the cooling process. Soup was measured later in the inspection and was 122F at that time. There was no spoon or scoop to stir the product, and all the ice had melted from the ice bath. Discussed with Chef that there needs to be better cooling procedures used with the ice bath method, such as stirring the food, and replenishing the ice frequently to help cool the product faster. Discussed cooling soup in smaller 2 inch pans if staff have other tasks that require their attention as a method of static cooling. Place these 2 inch pans in the Walk In Cooler to cool safely. Cooling methods fact sheets were provided via email with the report for guidance on cooling. Adopt better methods to cool soups in facility quickly and safely so they do not grow bacteria that can make people sick.
