- Crítica Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): Multiple examples of TCS foods in the make table and upright cooler near the wok stations holding between 47-59 degrees F. Make table was not plugged in, but was plugged in during the inspection and air temp was verified to be moving below 41 degrees F. Upright cooler was turned down to a colder setting and cardboard boxes were removed from the unit during the inspection. Redacción oficial (en inglés): Have an approved chlorine chemical sanitizer solution. The solution must have a minimum concentration of 50 ppm. The solution must also meet the temperature and pH requirements of this rule.
Nota del inspector (en inglés): The bar dish machine was observed with no measurable concentration of chlorine dispensing. The owner called the service provider during the inspection to have them remove the machine as they no longer needed it. Ensure that all sanitizers are dispensing within an approved range.
