    Nota del inspector (en inglés): Based on discussion of cooling methods for meals prepared by volunteers, meals such as hot dishes and portions of cooked meats are being covered in disposable tins and the tins stacked while the foods are still warm / hot. This is not an effective cooling method, and leaves temperature-abused foods at risk of causing bacterial intoxication. Discussed the Set & Forget method of cooling, which is validated to always cool foods safely. Work with staff and volunteers to use this method. 1. Let hot foods vent off heat on the countertop for about 20 minutes or until their temperature is approaching about 135F. 2. Spread the food out in shallow containers no deeper than 2 inches 3. Place the uncovered shallow containers into refrigerators with at least 2 inches of airflow space around each. 4. Don't cover the containers until the foods are fully cooled to 41F or below.

    Nota del inspector (en inglés): Observed two volunteers in separate domestic kitchen spaces not using effective cooling methods for prepared TCS foods. 1) Several dozen hard boiled eggs were being peeling and set in a bowl on the counter. Inspector discussed with the volunteer how they could put the peeled eggs into a cooler or refrigerator a dozen at a time to restart the cooling process. Volunteer began doing so. 2) Several hot pans of stuffing and mashed potatoes were being covered and stacked on the counter top. Inspector discussed with Person in Charge how covering and stacking hot prevents proper cooling. Person in Charge brought pans to cold units and spread them out to cool. Provide additional training and oversight to volunteers who prepare hot food that will be cooled. The most effective way to cool hot prepared foods is to spread them out in shallow pans (fill the food two inches deep or less) and place them uncovered, unstacked and spread out in a refrigerator or cooler. Do not cover or stack foods until they have fully cooled to 41F or below. (The cooling process is typically not going to be completed while volunteers are on site.)

    Nota del inspector (en inglés): Observed the refrigerators used for offsite delivery to other local RMHC programs nearly full of prepared food products. These units are used both for cooling and cold-holding the prepared foods, but there was not sufficient space to easily spread out the cooling foods. Provide additional ANSI refrigeration or freezer units to meet the demand for the volume of food.
