- Crítica Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.
Redacción oficial (en inglés): Keep all cold TCS foods at 41 degrees F or colder under mechanical refrigeration.
Nota del inspector (en inglés): Observed a significant amount of milk held in crates at 52F and cheese holding at 55F. Per discussion with the Person In Charge (PIC), the food was delivered around 10 AM and had been left out for two hours. The PIC was instructed to place the food items into the walk-in cooler to ensure proper temperature control. A conversation was had with PIC regarding the importance of placing delivered food into cold storage immediately. - Menor Problemas con equipos o utensilios
Los equipos, utensilios, termómetros, tablas de cortar o artículos desechables no estaban en buenas condiciones, no eran del tipo adecuado o no se guardaban correctamente.

Nota del inspector (en inglés): Observed a freezer being used for additional cold storage holding at 33F. The reach-in freezer's digital thermometer indicated -13F. Have reach-in freezer serviced to operate at the correct temperature. - Importante Alimentos no protegidos contra la contaminación
Los alimentos se guardaban o manipulaban de una forma que podía permitir que les llegaran gérmenes u otros materiales, como carne cruda guardada encima de comida lista para comer o alimentos sin cubrir. La contaminación cruzada es una causa común de enfermedades transmitidas por alimentos.

Nota del inspector (en inglés): Observed a few dented cans on-site. A conversation was had with the PIC regarding the potential risks associated with damaged cans. Discard dented cans to prevent the risk of contamination.
