    Nota del inspector (en inglés): Parsley was observed being prepped and chopped with bare hands at the time of inspection. When asked where this parsley was going to be used, Chef stated that it was going to be used as a garnish. Discussed with Chef that foods that are not going through a final cooking step are considered ready-to-eat and are not to be handled with bare hands as this can contaminate the food and spread potential foodborne illnesses. Parsley was repurposed for a stock/soup where it would be cooked thoroughly. Fresh herbs were observed being chopped with bare hands before being placed into a bread crumb mixture. When asked where this bread crumb mixture would be used, it was stated that it would be used as a topping on a finished dish with no further cooking step. Discussed with food employee and Chef that this is another food item that is considered ready-to-eat and its ingredients must not be touched with bare hands. Instructed Chef to pull bread crumb mixture as it could not be served and to make another batch that is not touched with bare hands. Chives were observed being chopped with bare hands at the time of inspection. When asked where these chives were going to be used, it was found that they were going to be used as a garnish on finished dishes. Discussed with Chef that this is a ready-to-eat food and cannot be touched with bare hands. Instructed Chef to pull chives and either repurpose them into a cooked dish or discard. Retrain staff to not touch ready-to-eat foods with bare hands and monitor and correct employees who deviate from this safe food practice. This violation was observed during the previous inspection and during 3 separate occasions during the most recent inspection. As a result, a $200 citation will be assessed to the establishment for this repeat violation.

Record the last day the shellstock is sold/served from each lot on the tag and retrain staff to document these dates as required.

    Nota del inspector (en inglés): Mint Yoghurt (46F), Blanched Broccolini (48F), Orange Juice (46F) and Cooked onions (47F) were observed improperly cold holding in the Saute Cooler at the time of inspection. These items were stored there overnight according to the Sous Chef. Discussed with Chef that Cooler may not be properly holding foods on the side of the unit furthest from the fan. Required all foods that were stored overnight be discarded. Foods near the fan were observed cold holding at 41F and could remain. Do not use the far side of the cooler for holding foods overnight until it is serviced and is distributing cold temperatures at 41F or lower. Once the cooler has been repaired and is holding temperatures properly, use can be resumed. Monitor temperatures of the unit and move internal thermometer to the side of the cooler furthest from the fan to monitor temperatures. Maintain all cold TCS foods at 41F or below at all times.

Discussed with Chef that they need to be registered with the State and not just certified from an approved course. Provided CFPM application with emailed report. Complete application and mail to State to be registered. Once certificate is received from State, post in establishment for inspectors to verify during inspection. Maintain State of MN CFPM certification current at all times.

Mentioned to Chef, who immediately intervened, had food employee discard the pizza slices that were touched with bare hands and had employee wash hands and put on gloves before resuming food prep activities. Retrain all staff to not touch food that is ready-to-eat with bare hands. Correct staff who deviate from this practice and discard any ready-to-eat food that is touched with bare hands.

    Nota del inspector (en inglés): There were caramalized onions and herb sauce in the Saute Cooler that measured 48F and 47F respectively. Confirmed with Sous Chef that these foods had been in the Cooler for at least 4 hours and were not cooling. These foods were further away from the cold air fan on one side of the cooler, while the colder temperatures in the temperature section were recorded at the end closest to the fan. Discussed with Sous Chef and General Manager to monitor the temperatures of the cooler closely, and strongly recommended a service order to ensure the cooler is working properly. Cooler was serviced within a few days of inspection according to the General Manager. Maintain all cold TCS foods at or below 41F at all times.

Once certificate is obtained, post in facility for inspectors to verify during inspections and maintain current.

Chef discarded portion of greens that were handled with bare hands.

    Nota del inspector (en inglés): Bechamel sauce (48F), pizza sauce (47F) and mozzarella cheese (47F) were observed improperly cold holding on a countertop in a makeshift ice bin as a cold holding method to be used for making pizzas. Discussed with Chef that foods are not properly refrigerated when containers are set on ice and this is not an acceptable alternative to mechanical refrigeration. Discussed using Time as a Public Health Control as a method for keeping pizza toppings out on counter and ready for use. Will send form with emailed report. Cooked beans (45F), tomato sauce (46F), caramelized onions (48F), and cooked pasta (46F) were observed cold holding in upper and lower parts of the Saute Cooler above 41F at the time of inspection. Discussed with sous chef that foods need to be kept 41F or below when cold holding to be safe. Foods above 41F were set to be discarded 4 hours from time of placement in the cooler. Maintain all cold TCS foods at or below 41F at all times for food safety.

Discussed with General Manager and Chef that there needs to be an independent method for ensuring that the hot water sanitizing step for the dish machine is hot enough to adequately sanitize dishes. Discussed several types with Chef and General Manager. Provide and maintain on site to ensure dish machine is sanitizing dishes.
