Los alimentos se guardaban o manipulaban de una forma que podía permitir que les llegaran gérmenes u otros materiales, como carne cruda guardada encima de comida lista para comer o alimentos sin cubrir. La contaminación cruzada es una causa común de enfermedades transmitidas por alimentos.

Nota del inspector (en inglés): Observed multiple containers of canned foods to be sharply indented. Food volunteers were instructed to inspect canned goods and separate any cans that have been sharply indented. The observed cans were segregated from the cans meant for distribution. Make sure all cans of food meant for distribution are in good condition. - Importante Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.
Redacción oficial (en inglés): The person in charge must ensure employees verify food delivered and received at the facility is: obtained from approved sources; delivered at required temperatures; protected from contamination, and adulteration. Food received during non-operating hours must meet the standards identified above and must be properly stored, including if necessary refrigerated.
Nota del inspector (en inglés): Through conversation with food volunteers, it was observed that there was no policy/procedure to inspect incoming foods to make sure that foods are in good condition and fit for distribution. Develop training for food volunteers to inspect donated foods to make sure that they are in good condition.
