Make sure hot TCS foods are held at a temperature of 135 F or above.

PIC stated that these items were just washed and seasoned 20 minutes prior to inspection. The containers were uncovered to allow for proper cooling. PIC was instructed to monitor temperature of fish and chicken wings to ensure that they cooled to 41 degrees F within 4 hours. Make sure that prepared TCS food are cooled in uncovered containers as required in this code.

A temperature of 41 degrees F for the cut lettuce was observed an hour later (at the end of the inspection). Observed raw chicken wings and raw fish to be at temperatures of 56 F and 50 F, respectively, in the fryer holding cooler. Items were held in covered containers. PIC stated that these items were just seasoned 45 minutes prior to inspection. The containers were uncovered to allow for proper cooling. PIC was instructed to monitor temperature of fish and chicken wings to ensure that they cooled to 41 degrees F within 4 hours. Ensure that prepared TCS food are cooled in uncovered containers as required in this code.
