These items were date marked days prior to the inspection. When discussed with chef, they stated that they put the grits and soups in thick plastic containers and place them in the walk-in cooler. It was discussed with chef that this is an ineffective way to cool thick food items. It was discussed with chef to place thick food items in shallow pans to ensure that they can cool quickly.
