When asked about the egg rolls the owner stated that he had left them on the counter for an hour during lunch rush. Owner was made aware of the fact that you must either use temperature control or time as a public health control. 3-501.16 (A)(2) Except during preparation; cooking; or cooling; or when TPHC is used TCS FOOD shall be maintained at 41F or less.
