Nota del inspector (en inglés): 3-501.16(A)(2) and (B); Priority; Cold-Holding: Spinach croissants in non-refrigerated front display case for sale; measured at 70F. This facility is Risk Category 1; not allowed to sell/prepare TCS food. Maintain cold Temperature Control for Safety (TCS) foods at 41F and less. CDI- Off-temperature prohibited items voluntarily discarded by PIC during inspection. This issue has been discussed with PIC on multiple past inspections. REHS submitted request to change facility risk category to Cat 2; which would allow for sale of these pre-madeTemperature Control for Safety (TCS) items. Once Cat 2; hold the meat/veggie croissants in proper cold-holding unit. One croissant could be placed out in the display case as DISPLAY ONLY item; to be discarded later; not used; or you could post a picture. PIC notified would also need to have a Certified Food Protection Manager present at all times; and to obtain a proper thin-probe thermometer to use with these foods. - Hallazgo Químicos guardados o usados de forma insegura

When tested found was not quat; but actually very high concentration bleach water; bleaching out test strip. When asked; PIC said used for spraying floor drains; to combat drain flies. PIC does not have chlorine test kit. Working containers used for storing POISONOUS OR TOXIC MATERIALS such as cleaners and SANITIZERS taken from bulk supplies shall be clearly and individually identified with the common name of the material. A TEMPERATURE MEASURING DEVICE with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat/veg crossaints. FOOD shall be protected from contamination by storing the FOOD: In a clean; dry location; Where it is not exposed to splash; dust; or other contamination; and At least 15 cm (6 inches) above the floor. Move food up off the floor; by at least 6 inches. In hot water mechanical WAREWASHING operations; an irreversible registering temperature indicator shall be provided and readily accessible for measuring the UTENSIL surface temperature.
