Two buckets of cooked chicken wings were cooling (47F; within 3 hours of cooling time) in this cooler unit. The person in charge (PIC) turned down the unit temperature. Then rechecked the unit's air temperature 20 minutes later at 40F; and the TCS food involved was at 44F. CDI removed the TCS food involved and placed it in the standing freezer to cool down. PIC turns down the unit temperature. 20 minutes later; rechecked the unit's air temp to be 41F; and the food involved was at 41F or below. Discussed with PIC about the concern of cold holding due to the limited cold holding unit ( no walk-in cooler) and the capacity to cool hot food. Since the food is in a cooling state (2 hours); there is no point at this time.
