Make sure to re-caulk sink on the wall. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC). 4-501.12 Cutting blocks and boards subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized shall be discarded. -Observation: make prep unit cutting boards had deep cuts and brown buildup. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC).

CDI- Cut cabbage and lo mein placed on ice bath and cooled back down to 41F (placed out this morning 1030am). Garlic and oil was voluntarily discarded. Broccoli; and chicken were heated to 165F. Pork mix was placed back into freezer to cool back down (out appx 1 hr). Implement TPHC policy if you so chose or keep the foods at 41F or below. TPHC policy form was emailed and discussed with the PIC. Make edits as neccessary if you want to use this.
