Cooked TCS FOOD shall be cooled from 135F to 70F within 2 hours and from 135F to 41F or less within a total of 6 hours. CDI- education given and stock was separated into smaller portions to cool quicker.

Discard the food requiring date labels once time/temperature window has expired; if it is not been labeled; or if the label is incorrect. CDI- Food items were voluntarily discarded by PIC.

    Nota del inspector (en inglés): 3-501.18; Priority; Roasted garlic dated (8/5) and (7/12) were observed in the walk-in cooler beyond 7 days. The PIC stated that these items were frozen and recently pulled from the freezer within the last couple days. Discard the food requiring date labels once time/temperature window has expired; if it is not been labeled; or if the label is incorrect. CDI- Food items were still within 7 day time frame due to freezing and pull thaw dates were added and education was given. The next occurrence will result in immediate discard. 3-501.17; Priority Foundation; Rice and hummus were observed without dates. Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. CDI- known dates were added.
