Los platos, equipos o superficies que tocan los alimentos no se lavaban, enjuagaban y desinfectaban correctamente, o el desinfectante no tenía la concentración adecuada. Las superficies limpias ayudan a evitar que los gérmenes lleguen a la comida.

Nota del inspector (en inglés): 4-601.11(A) Food Preparation Sink has an unclean film inside the basin that is both starchy and black. Use detergent and scrub pad to remove the film coating the food prep sink. EQUIPMENT FOOD-CONTACT SURFACES shall be clean to sight and touch. Los alimentos venían de una fuente no aprobada, les faltaban fechas o etiquetas obligatorias, o ya habían pasado su fecha límite de uso. Saber de dónde vienen los alimentos y qué tan viejos son ayuda a prevenir enfermedades.

Nota del inspector (en inglés): 3-501.17 Ready-To-Eat Time / Temperature Control for Safety Food; Date Marking (Pf) Prepared and Ready-to-eat food such as meatloaf; deli meat; cooked chicken; Hot Dogs; etc are not date marked. Refrigerated ready-to-eat food shall be date marked to limit refrigerated shelf-life to less than 7 days. Today the date the meatloaf was cooked was written directly onto the aluminum foil cover. Dates were added to food inside the low boy / refrigerated drawer unit by using the date marking stickers. - Hallazgo Señales de roedores o insectos
El inspector encontró ratones, ratas, cucarachas, moscas o rastros de ellos (como excrementos) dentro del negocio, o condiciones que podrían atraerlos. Las plagas pueden propagar bacterias a los alimentos y superficies, por eso se considera uno de los hallazgos más graves.

Nota del inspector (en inglés): 6-501.111 Controlling Pests - Cockroach is active on the wall to the right of the food preparation sink. Cockroach visible behind the CO2 alert box on the wall. Cut-resitant gloves stored in the wire basket attached to the wall at the food preparation sink have a lot of roach droppings on them. Wall also has roach droppings. The PREMISES shall be maintained free of insects; rodents; and other pests. The presence of insects; rodents; and other pests shall be controlled to eliminate their presence on the PREMISES by: (A) Routinely inspecting incoming shipments of food and supplies; (B) Routinely inspecting the premises for evidence of pests; (C) Using methods; if pests are found; such as trapping devices or other means of pest control as specified under sec.sec. 7 202.12; 7 206.12; and 7 206.13; Pf and (D) Eliminating harborage conditions. Some gloves were taken to the sink for cleaning; kitchen manager discarded the glove with the most roach waste on it.
