An EMPLOYEE shall eat; drink; or use any form of tobacco only in designated areas where the contamination of exposed food; clean equipment; utensils; and linens; unwrapped single-service and single-use articles; or other items needing protection can not result. A food employee may drink from a closed beverage container if the container is handled to prevent contamination of: The EMPLOYEE'S hands; The container; and Exposed FOOD; clean EQUIPMENT; UTENSILS; and LINENS; and unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES. Recommend use of drinking containers designed with lid and straw to keep employee hands away from mouth surfaces. CDI- Employee beverages and phone moved during inspection. When asked; PIC said these were brought out from the walk-in cooler to the low unit 2 hours ago; and that this unit was having issues but air temp looked ok this morning when they stocked it. Temperatures in walk-in cooler holding at 41F-42.6F. Main walk-in cooler has a lot of in-out use; with plastic curtain panels in place to help hold in cold air. At the main prep line across from very hot cook area; one uncovered pan of pork fat holding at 51F. Maintain cold Temperature Control for Safety (TCS) foods at 41F and less. CDI- Pork fat voluntarily discarded by PIC during inspection. Individual pan lids added to the TCS foods in the top section of the prep unit directly across from the high cook heat area. TCS foods from low unit placed in blast chiller for fast chill back to 41F and less; these items to be dated for 4-day max hold; and once cooled to be moved to other units. Low unit not to be used for TCS foods until repairs complete. Veg puffs at 42.6F in the main walk-in cooler also had date-marking adjusted to a 4-day limit. PIC to have the main walk-in cooler and the low cold-hold unit serviced and temperatures reduced. PIC to text repair invoice to REHS for verification that repairs completed. PIC stated this one was opened today. Refrigerated; READY-TO-EAT; POTENTIALLY HAZARDOUS FOOD (TIME/TEMPERATURE CONTROL FOR SAFETY FOOD) prepared and held in a food establishment for more than 24 hours shall be date-marked. The day of preparation shall be counted as Day 1 (ex.-date the milk opened; date the meat/vegetable cooked). Add date mark to prepared TCS foods that will be held over to the next day. PIC stated they had ordered a new food processor container and immediately discarded this damaged one. Multiuse FOOD-CONTACT SURFACES shall be: SMOOTH; Free of breaks; open seams; cracks; chips; inclusions; pits; and similar imperfections. CDI- Damaged juicer voluntarily discarded during inspection by PIC. Recommend No Paint stainless steel version of juicer. Example emailed to PIC. [REPEAT] 4-501.11; Core; Rusted/peeling wire rack along back wall of main walk-in cooler. EQUIPMENT shall be maintained in a state of good repair and condition. EQUIPMENT components such as doors; seals; hinges; fasteners; and kick plates shall be kept intact; tight; and adjusted in accordance with manufacturers specifications. Increase cleaning frequency to these areas. [REPEAT] 6-501.11; Core; Caulk around 3-comp sink with black microbial growth down into the caulk. In the main walk-in cooler; coving tiles missing on either side of the door on the inside of the unit. PHYSICAL FACILITIES shall be maintained in good repair. Recaulk these areas so smooth and cleanable. Replace the missing coving tiles. [REPEAT]
