    Nota del inspector (en inglés): 3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food; Hot and Cold Holding (P); When EHS arrived; PIC immediately informed him that the walk in cooler stopped functioning about an hour before the inspection. All food in the cooler was holding above 41F. Potentially hazardous food being held cold shall remain at 41F or below. CDI- Deli meats and cheese were voluntarily discarded. Food that had just recently even placed in the cooler or prepped were taken to the walk in freezer to be cooled before a 4 hour period elapsed; or taken to a sister establishment’s walk-in cooler. Emergency mechanic arrived to repair the cooler and ambient air temperatures began to drop. EHS is returning tomorrow to ensure the walk-in cooler is holding at 41F or below before the store re-opens. PIC voluntarily closed for the rest of the day to restore order of food/cooler. Cheese was being stored too highly above a prep top container and was above 41F. This cheese was placed in closed refrigeration to be cooled.
