CDI by removing plastic wrap from food items and placing in walk in cooler to lower temperature prior to being moved back to cold drawer.

Observed wings in walk in cooler that were not below the 70 degrees threshold within the two hour mark. CDI by flipping wings in the tub to allow release of heat form wings at the bottom and rearranged in the freezer. Wings were tempted again at 2:30pm and one batch had a temperature of 59-74F.

Ensure boiled eggs are cooled to 41 degrees F prior to placing in preparation unit. .
