- Hallazgo Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): 3-501.15; Priority Foundation; Cooling Methods: In the back room walk-in cooler; beef bouligniase cooked yesterday observed in large thick plastic tightly covered container holding at 45F. When asked; PIC stated it was cooled yesterday using chill wand method. Ambient air temp in the cooler is 38F. This item has not reached 41F and less in the required time. In the main kitchen; multiple large thick plastic bins of sauce cooling all huddled together; with chill wands in place; but product temperature still extremely high; no where close to 135F. When cooling; these products can sit out until closer to 135F before starting active cooling methods like chill wands. Recommend setting digital timer to come back to check in 30 minutes; if still very hot; reset for another 30 minutes; if getting close to 135F; that would be when to add the chill wands to hurry the product from 135F down to 70F quickly; within 2 hours. Cooling shall be accomplished in accordance with the time and temperature criteria specified in Food Code by using one or more of the following methods based on the type of FOOD being cooled: Placing the FOOD in shallow pans; Separating the FOOD into smaller or thinner portions; Using rapid cooling EQUIPMENT; Stirring the FOOD in a container placed in an ice water bath; Using containers that facilitate heat transfer (metal); Adding ice as an ingredient; or Other effective methods. When placed in cooling or cold holding EQUIPMENT; FOOD containers in which FOOD is being cooled shall be: Arranged in the EQUIPMENT to provide maximum heat transfer through the container walls; and Loosely covered; or uncovered IF protected from overhead contamination (ex.- on speed rack with top cover pan).
