Discussed the matter with the Person In Charge (PIC). Repeat. - Observed accumulation on the bottom of the container that stored the ice scoop. Corrected during inspection (CDI); the ice scoop container was cleaned.

CDI - the containers of sliced tomato and chopped lettuce were restored in the walk-in cooler to cool them down.

PIC stated the precooked chicken had been pulled from the freezer to thaw in the walk-in cooler since yesterday. CDI - the precooked chicken date marked indicating yesterday. First observation; no point at this time.

Discussed the matter with the PIC.

Ensure food is 41F throughout entire product BEFORE placing on shelf by cooking line. Use calibrated thermometer to check food temperatures. REMEMBER - these foods MUST be maintained out of refrigerator and cannot be returned back to the refrigerator. If there is any lettuce; tomatoes and cole slaw in containers after 4 hours; the food in containers on counter must be discarded in trash. Full deductions continued due to repeats.
