Foods must be cooled by using the following methods: placing foods into smaller portions; using an ice bath; leaving food uncovered or slightly covered if there is no risk of overhead contamination; using heat transfer equipment; adding ice as an ingredients. CDI... The food was uncovered and placed into smaller portions. Foods must not be covered until the 41F temperature has been reached.
