Nota del inspector (en inglés): 3-501.16(A)(1) Two fried shrimp and small portion of mixed veggies in hot cabinet 113F and 128F respectively. Queso hot hold unit in front counter area 129F and stated to be made this morning with the other queso that was hot holding appropriately in other units. This unit was reading over 150F. Monitor this unit; and replace if necessary. Maintain TCS foods in hot holding at 135F or above. -P Queso reached over 135F above 30 minutes later in unit and was said to have been cooked the same as the other unit this morning. Use methods such as open/vented shallow pans; large ice baths and active stirring. Cold air must flow around product to remove the heat. Lids removed.
