Characteristics-Materials for Construction and Repair Materials that are used in the construction of UTENSILS and FOOD-CONTACT SURFACES of EQUIPMENT may not allow the migration of deleterious substances or impart colors; odors; or tastes to FOOD and under normal use conditions shall be: P (A) Safe; P (B) Durable; CORROSION-RESISTANT; and nonabsorbent; (C) Sufficient in weight and thickness to withstand repeated WAREWASHING; (D) Finished to have a SMOOTH; EASILY CLEANABLE surface; and (E) Resistant to pitting; chipping; crazing; scratching; scoring; distortion; and decomposition. CDI-The plantain smasher was placed out of service. Replace this with a NSF food processor or one that is stainless steel or marble.

A small amount of rice was stored in a pan on a prep table in the corner. It was 83 degrees F. Hot foods shall be held to 135 degrees or above. CDI - Rice was discarded during the inspection. White rice was 123 degrees F (cooked at noon). Again; maintain hot food to 135 degrees or above. CDI - Rice was reheated to 165 degrees F before end of inspection. Steak (in front hot case on the counter) was 105 degrees F. CDI - Steak was reheated to 170 degrees F during the inspection. Beef was 119 degrees F stored in a pan on a prep table in the corner. CDI - Beef was made at noon so allowed to reheat to 165 degree during the inspection; then placed on the hold hot steam table.

Make cold foods earlier and cool in the walk-in cooler or freezer before placing in the refrigerated case. CDI - Pasta was moved to the walk-in freezer to cool.

CDI - Ensure all chemicals are labeled according to the products inside. CDI - Sanitizer was remixed and the bottle was labeled. 7-204.11 Sanitizers; Criteria - Chemicals (P); Bleach solution in the spray bottle was too strong. Chorine-bleach sanitizer shall be mixed to 50-200 ppm. Use test paper to check strength. CDI - Solution was mixed to the proper concentration. A bottle of alcohol was stored above dry food containers. Store chemicals/medicines; etc. away from food. CDI - Alcohol was moved to the chemical storage area during the inspection.
