Separate raw animal foods from ready-to-eat foods and washed/unwashed fruits and vegetables. Ground beef cooling in walk in cooler in large pan covered at 50F. Ground beef had 45 minutes to cool down to 41F. Quickly cool foods. Use methods such as open/vented shallow pans; large ice baths and active stirring. Cold air must flow around product to remove the heat. CDI- Refried beans were voluntarily discarded. The ground beef was allowed to be placed in the walk in cooler on sheet pan to cool to 41F to prevent discarding. Repeat. The whole packages of beef had been sitting out for more than four hours per employee. TCS frozen foods shall be thawed under refrigeration that maintains the food temperature at 41F or less or completely submerged under running water at a temp of 70F or below; with sufficient water velocity to agitate and float off loose particles in an overflow; and for a period of time that does not allow thawed portions of ready to eat food to rise above 41F OR for a period of time that does not allow thawed portions of a raw animal food requiring cooking above 41F; for more than 4 hours including the time the FOOD is exposed to the running water and the time needed for preparation for cooking or the time it takes under refrigeration to lower the food temperature to 41F. The door latch on the walk in refrigerator and walk in freezer does not stay shut when door is closed due to the latching mechanism on the door. The cold drawers below the flat top hang low when opened and the gaskets on these drawers are torn. Replace. Repeat. 4-501.12; Core; Cutting board on flip top cooler scored heavily.
