    Nota del inspector (en inglés): 3-501.19(B); Priority; Sliced cheese and coleslaw cups under time holding were not discarded at the 4 hour mark; new labels were added to existing containers. Also observed chopped chicken and cooked diced beef without time labels. If TPHC is used for up to a maximum of 4 hours: The food is marked for 4 hours past the point in time it was cut/opened. The food shall be identified to indicate the time that is 4 hours past the time when the food is removed from temp control; The food shall be cooked and served; served; or discarded; within 4 hours of removal from temp control; and unmarked food; or food exceeding a 4-hour limit shall be discarded. CDI - Foods over 4 hours were voluntarily discarded and correct time labels added to the chopped chicken and diced beef.

CDI - PIC has stated that there is a work order placed to fix the light.

TCS (time/temp control for safety) food in cold holding shall be maintained at 41F or less. CDI - Chicken and cheese quesadillas were recently prepared and moved into the walk-in freezer for rapid cooling; other foods were voluntarily discarded. Reminded PIC that prepared foods must be at 41F or less before they can be placed in time holding.

    Nota del inspector (en inglés): 4-501.11; Core; Observed a significant amount of ice and "freezer burn" buildup inside the walk-in freezer and on the shelving; PIC has stated that there is a part missing from the freezer door which prevents flow of warm air into freezer. Equipment components such as doors; seals; hinges; fasteners; and kick plates shall be kept intact; tight; and adjusted in accordance with manufacturer's specifications. Repair walk-in freezer door to prevent this excessive ice buildup before the next inspection.
