Los platos, equipos o superficies que tocan los alimentos no se lavaban, enjuagaban y desinfectaban correctamente, o el desinfectante no tenía la concentración adecuada. Las superficies limpias ayudan a evitar que los gérmenes lleguen a la comida.

Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): 3-501.16 (A)(2) and (B); Priority; [Repeat] Cold-Holding: In front right-side prep unit; cups of cut melon were all holding too warm at 43-46F. Half & half in a carafe on the counter in the self service area was holding at 61F. Maintain cold Temperature Control for Safety (TCS) foods at 41F and less. Los alimentos venían de una fuente no aprobada, les faltaban fechas o etiquetas obligatorias, o ya habían pasado su fecha límite de uso. Saber de dónde vienen los alimentos y qué tan viejos son ayuda a prevenir enfermedades.

Nota del inspector (en inglés): 3-501.18; Priority; Chicken Tinga in both the coolers and freezers were not date marked; plant based chicken was also missing a date. A container of yogurt mix for smoothies (part skim milk and yogurt) were observed with two different dates (3/26 & 4/2) and product could not be verified by management if it was prepared on the later date. Discard the food requiring date labels once time/temperature window has expired; if it is not been labeled; or if the label is incorrect. CDI- known dates were added to the chicken tinga and plant based chicken. The yogurt mix was voluntarily discarded by PIC.
