There is no cooking equipment at this location and this process is not being performed here. Use food from approved sources only. CDI- the chicken was voluntarily discarded. EHS; PIC and the Department will discuss sous vide process and implementation of HACCP plan if required.

There was not a start temperature so EHS/PIC assumed start temp of 70F. PIC stated the cut lettuce was washed/cut at 10:00am. Lettuce was then required to cool to 41F by 2pm. Cooling rate was not rapid enough to get down to 41F within the 4 hour time frame. Cooling rate would need to be .12F/min if starting prep from ambient temp. Quickly cool TCS foods that are prepared from room temperature ingredients and must be to 41F within 4 hours. CDI- PIC voluntarily discarded the lettuce at the make table line. EHS provided education on cooling (see violation #33; methods).

Repeat violation. Temperature logs are highly suggested for all coolers twice a day to prevent cold holding issue before they begin. Additionally; it is highly recommended to cover the open top coolers when not in use and purchase cold rail separators that prevent cold air from escaping between containers.

(B) EQUIPMENT components such as doors; seals; hinges; fasteners; and kick plates shall be kept intact; tight; and adjusted in accordance with manufacturer's specifications. (C) Cutting or piercing parts of can openers shall be kept sharp to minimize the creation of metal fragments that can contaminate FOOD when the container is opened.
