When ready to eat; refrigerated; TCS foods are prepared and frozen; then the preparation and thaw dates must be written on the food. Preparation date and thaw date count as Day 1 and Day 2 in your 7 day total hold time. CDI-Educational materials on date marking in Spanish were sent via email to owner. EC allowed PIC to add the thaw date to the foods to allow for proper disposal times for foods.
