Nota del inspector (en inglés): 3-501.16 (A) (2) and (B) Time / Temperature Control for Safety (TCS) Food; Hot and Cold Holding (Priority); Ham; roast beef and tomatoes in the reach in cooler were holding 48-50F. Cheese also stored in unit was holding 40F. TCS foods must be held cold at 41F or lower. Some items were removed for cleaning; then placed back into unit. Foods were checked again after 20 minutes; and temperature did not go down. CDI-Foods were moved into another unit to facilitate faster cooling. This unit was adjusted down; and will be serviced if needed.

CDI-Utensils were removed. 6-301.11 Handwashing Cleanser; Availability (Priority Foundation); Soap was missing at two of the hand sinks. Soap must be available at all times. CDI-Soap was refilled. 6-301.12 (Priority Foundation) Paper towels were missing at the hand sink in the rear prep/wash area. Nota del inspector (en inglés): 2-301.12 (A);(B) Handwashing needs to be taught to employees. Employee did not have access to soap because the dispenser was empty. Employee washed hands too quickly. After washing hands; cloth towel was used to dry hands that is stored on the table to the right of the handwashing sink. Wash hands for at least 20 seconds. Follow the cleaning procedure to adequately wash your hands. Use warm water; soap; scrub 10 to 15 seconds; rinse; and immediately follow the cleaning procedure with thorough hand drying method using paper towel. -P Procedure was discussed and proper handwashing conducted. Nota del inspector (en inglés): 3-501.16(A)(2) Sandwich preparation refrigerator appears to be functioning well but some foods are not 41F as required: Chicken pieces 56F; Pepper Jack Cheese 56F; Cheddar Cheese 49F. Chicken and Pepper Jack Cheese are stacked on top of other pans of food; effectively out of the refrigerator. Cheddar Cheese is dark; discolored and stacked too high within the pan. Store pans properly in the refrigerator and follow fill lines. Maintain TCS foods in cold holding at 41F or less. -P Top layers of cheddar cheese were discarded. Chicken and PepperJack were removed. Adjustment was made to the temperature settings; dial was found in the incorrect position. Quantities should be lower. We discussed implementing a four hour time holding for food that cannot be maintained at 41F and colder (similar to the system used for pickles) but must include time labeling.
