Nota del inspector (en inglés): 3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food; Hot and Cold Holding (P) Squid ink; curry paste; lettuce; cooked egg; and beef sauce within the left tall reach-in cooler were maintained above 41F. Rice milk and raw fish in back tall cooler were maintained above 41F. Temperature controlled for safety foods shall be maintained at 41F or less. CDI: Lettuce; cooked egg; and opened container of squid ink were voluntarily discarded by PIC. Other items were moved to walk-in cooler to cool to 41F. PIC stated that they will contact refrigeration company prior to continued use for storage of TCS foods. Rice milk and raw fish from back cooler were relocated to walk-in to cool.

Bag of onions was hanging in walk-in cooler and contacting raw duck on meat hooks. Cross-contamination shall be prevented during storage by separating raw food from ready-to-eat foods and based on final cook temperatures. CDI: Onions were moved to another rack in walk-in cooler. Employee's gloves were changed hands were washed. During pauses in food preparation or dispensing; food preparation and dispensing utensils shall be stored in the food with their handles above the top of the food and the container; on a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized; in running water; or in a container of water if the water is maintained at a temperature of at least 135F. Temperature controlled for safety foods shall be cooled to 70F from 135F within two hours and cooled to 41F from 135F within 6 total hours. CDI: Pork belly was voluntarily discarded by PIC.
