Nota del inspector (en inglés): 3-304.11 FOOD shall only contact surfaces of EQUIPMENT and UTENSILS that are cleaned and sanitized; SINGLE-SERVICE and SINGLE-USE ARTICLES; or linens used as container liners for service. P -Observation: two (2) overflowing containers with cooked shrimp; and cooked noodles was touching soiled non-food contact surface of the cold hold unit. Make sure non-food contact surfaces are clean to touch and sight and food is not overflowing inside the containers. -Corrected During Inspection (CDI): Person in Charge (PIC) voluntarily discarded food items. - Hallazgo Alimentos a una temperatura insegura

Nota del inspector (en inglés): 3-501.16 (A)(2) - TCS FOOD shall be maintained at 41F or less. P -Observation: overflowing shrimp (49F) and overflowing cooked noodles (60F) had temperature above 41F. Below the cold line; food items were at 41F or below. -Corrected During Inspection (CDI): Environmental Health Specialist (EHS) recommends to keep food items 80% and/or below the cold line; where equipment is designed to keep food items at 41F or below. (A) Outer openings of a FOOD ESTABLISHMENT shall be protected against the entry of insects and rodents by: (1)Filling or closing holes and other gaps along floors; walls; and ceilings; -Observation: exit door located near dry storage had sunlight coming through the door. Screen door with holes were fixed but gaps are found around the frame of the door. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC). 6-501.112 Dead or trapped birds; insects; rodents; and other pests shall be removed from control devices and the PREMISES at a frequency that prevents their accumulation; decomposition; or the attraction of pests. -Observation: behind ice machine were found dead insects; including dead spiders. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC). - Hallazgo Problemas de limpieza o desinfección

Nota del inspector (en inglés): 4-202.11 Food Contact Surfaces-Cleanability A) Multiuse FOOD-CONTACT SURFACES shall be: (2) Free of breaks; open seams; cracks; chips; inclusions; pits; and similar imperfections; Pf (3) Free of sharp internal angles; corners; and crevices; Pf -Observation: two (2) fryer baskets had metal coming out that can fall on the food and become a solid hazard. Plastic food containers was cracking and chipping plastic as well. -Corrected During Inspection (CDI): food employee removed containers from service. 4-202.16 Nonfood-contact surfaces shall be free of unnecessary ledges; projections; crevices; and constructed to allow easy cleaning and facilitate maintenance. -Observation: original plastic from manufacturer for equipment protection it is still on the equipment; reach-in freezer; and it has to be removed. It is not easily cleanable and chipping pieces of the plastic can fall in food items. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC). 4-402.11 Fixed Equipment; Spacing or Sealing. (A) EQUIPMENT that is fixed because it is not EASILY MOVABLE shall be installed so that it is: (3) SEALED to adjoining EQUIPMENT or walls; if the EQUIPMENT is exposed to spillage or seepage. -Observation: review caulking in all sinks. In food sinks caulking is breaking and coming out of the wall. Nota del inspector (en inglés): REPEAT 4-602.13 Nonfood Contact Surfaces of EQUIPMENT shall be cleaned at a frequency necessary to preclude accumulation of soil residues. -Observation: outside rice cooker; in the handle; and around opening had grease accumulation. Outside and inside reach-in; gaskets; between lid and food containers in cold hold unit; fryer; stove; prep tables; and equipments in general; around the facility; had severe grease accumulation; food debris; black buildup; and it needs to be clean as often as necessary to keep it clean. -Inside ice machine in ice deflector had pink and black slime growing activities. -Environmental Health Specialist (EHS) discussed the matter with Person in Charge (PIC). - Hallazgo Problemas de agua, plomería o drenaje
