Acceptable thawing methods: Under refrigeration; with food maintained at 41F or below; Under running water that is 70F or below; and food remains at 41F or below; or in a microwave; so long as food is immediately moved to traditional cooking methods to finish cooking. CDI-Pork was voluntarily discarded; as PIC was unable to determine how long pork had been over 41F. Educational materials were provided to PIC on thawing methods; and reviewed with PIC.

The service tech is Brad Sutton; I spoke to him on the telephone today. Brad Sutton with Cheney Brothers arrived. Dish machine tubes were replaced. Relief valve top was replace. Owner indicates he recently had to purchase his own chemicals from local stores since he has been unable to receive chemicals from EcoLab Cheney Brothers. Service tech stated purchasing and using chemicals from an “unapproved” supplier has voided this restaurant’s contract. Current contract has been requested and should be supplied to the restaurant owner tomorrow from tech Brad Sutton. Contract is said to require a minimum order of four buckets of chemicals (2 detergents; rinse aid and sanitizer) and meet a minimum expenditure. Service is not conducted without profit from chemical sales. Open jug of household bleach was fed into the dish machine today. Concentration appears lower than desired at the conclusion of today’s repair.US Foods or Sysco can used as suppliers for the chemicals and linked to the EcoLab Cheney Brothers service contract. Tech states he will make a service visit when requested by the operator.; 4-601.11 (A); Priority Foundation; Food Preparation Sink; Meat Sink is not clean with unclean film coating interior surfaces. Use detergent; soap; to clean the sink after each use. Recommend scrub pads; like Scotch Brite pads instead of sponges. Detergent was added to the meat to be cleaned today. After cleaning and rinsing; apply sanitizer and allow to air-dry.
