Observed yogurt (onions added to commercially made yogurt) and mango lassi (mango puree - canned; added to commercially made yogurt) cooling from prep at a rate of .03F/min. Observed cooked onion curry cooling at a rate of .03F/min. Both cooling rates are not fast enough to properly cool product safely. CDI- PIC immediately opened the containers of yogurt and mango lassi to cool. The curry was divided into 4 pans from 2 to hit proper cooling temperatures.

Premade yogurt with added ingredients (onion) was not cooling from being out and adding onion; in large bucket and tightly covered. Onion curry cooling in large container covered in greater than 4 in portions. CDI- PIC separated the containers to cool more quickly. Educated on proper cooling methods and provided sticker as visual aide. Place canned mango in walk in cooler to help aide in preparation and cooling. Full points taken based on severity and number of items that were not being cooled properly.

CDI- PIC voluntarily removed the pots in case they are a hazard as he could not confirm they are safe; food grade containers.
