    Nota del inspector (en inglés): 4-202.11 Food Contact Surfaces-Cleanability A) Multiuse FOOD-CONTACT SURFACES shall be: (2) Free of breaks; open seams; cracks; chips; inclusions; pits; and similar imperfections; Pf -Observation: fryer basket had metal coming out that can fall on the food and become a solid hazard. -Corrected During Inspection (CDI): Person in Charge (PIC) voluntarily discarded basket fryer. 4-501.12 Cutting blocks and boards subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized shall be discarded. -Observation: make prep unit cutting boards had deep cuts and brown buildup. If it can no longer be cleaned make sure to discard. -Environmental Health Specialist (EHS) discussed the matter with the Person in Charge (PIC).

Please repair this hand sink immediately. All hand sinks must be accessible. CDI- There is another hand sink 4 feet away. 5-205.11 Using a Handwashing Sink - Operation and Maintenance (Pf) The salad prep hand sink has short rubber baffles. The baffles needs to be taller and made of a solid material. Right now hands/water can splash on to the prep surface. Baffles must be tall enough to prevent contamination from splash. CDI- Baffles are in place; but better baffles are needed.
