A food employee may drink from a closed beverage container if the container is handled to prevent contamination of: The employee’s hands; The container; and exposed FOOD; clean EQUIPMENT; UTENSILS; and LINENS; and unwrapped SINGLE-SERVICE and SINGLE-USE ARTICLES. Recommend use of drinking container designed with lid and straw to keep employee hands away from mouth surfaces. CDI- Employee beverage moved during inspection.

Maintain cold Temperature Control for Safety (TCS) foods at 41F and less. CDI- Coleslaw exceeding 41F voluntarily discarded by PIC during inspection. Recommend having both cold-hold units serviced and temperature reduced a little to improve cold-holding. For TCS foods in the top section of prep unit; recommend using narrow deep metal pan when possible; and individual plastic pan lid. Consider using a separate cooler with ice for the bottled beverages so not having to open the tall door cold-hold unit as often. [REPEAT]

Add labeling to these items.

Two shaker containers of spices sitting right in front of handwashing sink where exposed to potential splash. Large bin of flour stored directly on the floor. FOOD shall be protected from contamination by storing the FOOD: In a clean; dry location; where it is not exposed to splash; dust; or other contamination; and at least 15 cm (6 inches) above the floor. CDI- Food moved during inspection. Recommend moving the paper towel dispenser to directly above the handwashing sink; so counter by service window would be made available for to-go food storage. Observed a lot of in and out of this cooler as well. Maintain cold Temperature Control for Safety (TCS) foods at 41F and less. CDI- Raw chicken exceeding 41F but not over 45F moved to freezer space for quick chill. All other TCS foods in this unit voluntarily discarded by PIC during inspection. Have this unit serviced and temperature reduced before returning to service. Start maintaining a temperature log of TCS foods being loaded from the Commissary before transport to ensure they start at 41F and less. Rethink how the cold-hold storage units are used to reduce the amount of times the tall-door refrigeration unit is opened (ex.- Place bottled beverages in a large cooler with ice in the front compartment of the truck instead of in the tall refrigeration unit. Have the marinated raw chicken portioned into smaller pans so when a pan is taken out for dredging; the entire pan is cooked instead of returning a partial pan of chicken that has now been sitting out for a time. Maybe use the prep unit; that is designed for more frequent use; to hold some of the chicken.)
